Known as the Salin d'Aigues-Mortes, it is the largest salt marsh in the Mediterranean, producing about 500,000 tons of salt per year. Microscopic algae are found in the concentrated salt water giving the various hues by synthesizing beta-carotene to protect itself from the sun.
